  • 1/2 cup almond flour
  • 1 cup Paleo pesto (plus 1/2 cup to top the burgers, optional)
  • 1 egg, whisked

Instructions

  1. Make the pesto: in a dry skillet over medium-low heat, toast pine nuts until golden, stirring constantly to avoid burning. Remove from heat and let cool. In a food processor, combine basil leaves, garlic, cooled pine nuts, sea salt, and olive oil; process until smooth. Transfer pesto to a jar and refrigerate until needed.
  2. Prepare for broiling: line two baking sheets with aluminum foil. Preheat the broiler on high and position the oven rack so the burgers will sit about 2 inches from the heat source.
  3. Form and cook patties: in a bowl, mix the whisked egg, beef, pesto, and almond flour until combined. Shape the mixture into six even patties and arrange them on the baking sheet.
