Simple summer side dishes cooked on a flat top griddle make weeknight meals easy. This Blackstone Garlic Ranch Zucchini and Tomatoes recipe is garden-fresh, flavorful, and quick to prepare.
I prepared this alongside Blackstone Hot Honey Lemon Chicken Skewers for a complete, fuss-free dinner on the griddle. Both dishes share a similar cook time and minimal prep, making the whole meal stress-free.
How to make Blackstone Garlic Ranch Zucchini and Tomatoes

Start by cutting a large zucchini into roughly 1 1/2-inch cubes. If you don’t have a large zucchini, use two small to medium zucchini instead.

Mince several cloves of fresh garlic and set them aside.

Preheat your Blackstone or other flat top griddle to medium. Add a splash of your preferred cooking oil, then add the zucchini and a pint of grape tomatoes.

Season with dry ranch seasoning, Italian seasoning, kosher salt, and pepper. I used Blackstone Parmesan Ranch and Tuscan Herb seasonings, but any comparable seasonings will work.

Cook for about 6 minutes, stirring a few times so the zucchini chars lightly and the tomatoes begin to soften. If you’re cooking other items on the griddle, like chicken skewers, they can cook alongside the vegetables.

Add the minced garlic, mix well, and continue cooking for another 3 to 4 minutes, stirring occasionally until the garlic is fragrant and the zucchini is tender-crisp.

Ingredients
- cooking oil of choice
- 1 large zucchini (or 2 small to medium zucchini) cut into about 1 1/2-inch chunks
- 1 pint grape tomatoes
- 1/2 tablespoon dry ranch seasoning
- 1/2 tablespoon Italian seasoning
- kosher salt, pepper
- 4 to 6 cloves garlic minced
Instructions
