1 pound linguine (or spaghetti)

2 tablespoons butter

6 ounces thick-cut bacon or pancetta, diced

1 tablespoon chopped shallots

1/2 cup diced sweet onion

1 cup heavy cream

1/2 cup reserved pasta cooking water

1 cup grated pecorino, parmesan, or Romano cheese (or a blend)

3 large eggs

1 bunch fresh parsley, chopped (about 3 tablespoons flat-leaf parsley)

1/2 teaspoon freshly grated nutmeg

Salt and freshly ground black pepper, to taste

Directions

1. Prepare the egg and cheese mixture: In a stainless steel or heatproof bowl, whisk together the three eggs, grated cheese, heavy cream, nutmeg, and half of the chopped parsley. Whisk until well combined and set aside. This mixture will form the base of the sauce and should be at room temperature before you combine it with warm pasta.

2. Cook the bacon or pancetta: Heat a large skillet over medium heat and melt the butter. Add the diced bacon or pancetta and cook until it is crisp and deeply browned. Use a slotted spoon to remove the cooked bacon and drain briefly on paper towel. Reserve the rendered fat in the skillet—this adds flavor to the dish.

3. Sauté aromatics: Add the chopped shallots and sweet onion to the skillet with the bacon fat. Sauté for 2–3 minutes until the onions are softened and beginning to caramelize. Be careful not to burn them; you want a sweet, savory base to complement the salty cheese and bacon.

4. Cook the pasta: Bring a large pot of water to a rolling boil and add about 2 tablespoons of salt. Cook the linguine until just al dente according to package directions. Before draining, reserve 1/2 cup of the starchy pasta cooking water—this will help emulsify the sauce.

5. Combine pasta and pan: Drain the pasta and transfer it directly to the skillet with the sautéed onions over low heat. Add the reserved pasta water and gently toss or stir to deglaze the pan, loosening any flavorful browned bits from the bottom.

6. Finish with the egg mixture: Remove the skillet from direct heat or turn the burner to the lowest setting. Add the egg and cheese mixture to the warm pasta in stages, stirring constantly to create a creamy sauce. The residual heat of the pasta will gently cook the eggs without scrambling them. Fold in the reserved crispy bacon pieces.

7. Season and serve: Taste and adjust seasoning with salt and freshly ground black pepper. Continue stirring for another 2–3 minutes to ensure the sauce is smooth and well-coated on the pasta. Remove from heat, garnish with additional grated cheese and the remaining chopped parsley.
