This watermelon, cucumber and feta salad is ideal for hot summer days. It’s bright, refreshing and comes together quickly with minimal fuss.

Sweet, juicy watermelon pairs with crisp cucumber and crumbly salty feta, while fresh mint and a bright lime vinaigrette lift the flavors. With so few ingredients, use the best watermelon and feta you can find for the most pleasing balance of sweet, tangy and salty.

Pro tip: Layer the crumbled feta on top of the salad rather than tossing it in. That keeps the feta visible and prevents it from sinking to the bottom of the bowl.

If you want neat cubes of watermelon for this recipe, the simplest approach is to cut away the rind and cube the flesh into uniform 1-inch pieces. Consistent sizing keeps each bite balanced.
