Ingredients
2 eggs
1 1/2 cups light olive oil
1/2 tsp dry mustard
1/2 teaspoon pepper
1 teaspoon kosher salt
2 tablespoons apple cider vinegar
1-2 tablespoons freshly squeezed lemon juice
Instructions
- Place the eggs in a wide-mouth quart mason jar. Position an immersion blender at the bottom of the jar.
- Turn the blender on and, keeping it at the bottom at first, slowly pour in the olive oil. As the oil incorporates, lift the blender slightly and continue blending until the mixture is fully emulsified and thickened.
- Add the dry mustard, salt, pepper, and apple cider vinegar. Blend briefly until everything is fully combined.
- Taste and add 1 to 2 tablespoons of freshly squeezed lemon juice, blending again to incorporate. Adjust seasoning if needed.
