  • 1 box cake mix prepared according to package directions for a 9×13 cake and cooled completely (any flavor; red velvet works well)
  • 1/4 – 1/3 container frosting (any flavor; vanilla buttercream suggested)
  • 2 bags candy melts (colors of your choice; pink and red are great for Valentine’s Day)

Instructions

  • Crumble the cooled cake into a large bowl using your hands or a fork until it resembles fine crumbs.
  • Add about 1/4 of the frosting to the crumbs and mix thoroughly. If the mixture seems dry, add more frosting a little at a time. The mixture should hold together without falling apart.
  • Use a 1 1/2-inch cookie scoop or a tablespoon to portion the mixture. Roll each portion between your palms into smooth balls, pressing firmly so they hold their shape.
  • Place the rolled cake balls on a parchment-lined baking sheet and chill in the refrigerator or freezer for about 20 minutes to firm up.
  • While they chill, melt roughly one-third of one bag of the candy melts in a microwave-safe bowl according to package directions, or use a double boiler. This will be used to secure the sticks.
  • Remove the cake balls from the fridge or freezer. Dip the tip of a lollipop stick about 1/4 to 1/3 of the way into the melted candy and insert it into a cake ball about halfway or three-quarters of the way through. Return the cake pops to the fridge or freezer for another 20 minutes so the candy sets and the sticks stay secure.
  • Melt the remainder of the candy melts following package directions. Pour the melted candy into a narrow glass or cup for easier dipping.
  • Dip each chilled cake pop into the melted candy until fully coated. Hold it briefly to allow excess coating to drip back into the cup.
  • Lightly tap the stick on the rim of the glass and rotate the pop to remove any extra coating and create an even finish.
  • While the coating is still wet, add sprinkles or other decorations to suit the occasion. Work quickly for the best adhesion.
  • Place the finished cake pops upright in a piece of Styrofoam or a dedicated stand and allow them to dry completely. Once set, they are ready to serve and enjoy.
