If you’re short on time, you can use a boxed vanilla cake mix and simply tint the batter green—this small shortcut still yields delicious results and saves on prep.

The cupcakes themselves are a classic vanilla batter tinted green with gel food coloring. If you choose to make them from scratch, the batter includes flour, baking powder and soda, butter, sugar, egg whites, oil, vanilla and buttermilk for a tender crumb. When baked, cooled and optionally cored, each cupcake can be filled with gold sprinkles so every bite reveals a little treasure.

For the frosting I use a rich vanilla buttercream made with plenty of butter, sifted powdered sugar, heavy cream and vanilla extract. After whipping it until light and smooth, divide the frosting in half—tint one portion green and the other orange. Ingredients
Leprechaun Hats:
- 1 package green candy melts
- 1 tablespoon shortening
- 20 Oreo thin cookies
- 20 large marshmallows
- Black frosting tube
- 20 mini yellow candies (for buckles)
Green Vanilla Cupcakes:
- 1 2/3 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 3 large egg whites, room temperature
- 1/3 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup buttermilk, room temperature
- Few drops green gel food coloring
- Gold sprinkles, for filling (optional)
Green and Orange Frosting:
- 2 cups unsalted butter, softened
- 1/8 teaspoon salt
- 8 cups sifted powdered sugar
- 1/2 cup heavy whipping cream
- 1 tablespoon pure vanilla extract
- Few drops orange gel food coloring
- Few drops green gel food coloring
- 1 cup orange sprinkles
Instructions
For the Leprechaun Hats:
- Line a baking sheet with a silicone mat or wax paper.
- Melt shortening in a heatproof bowl set over simmering water, then add half the candy melts and stir until smooth.
- Remove from heat, dip Oreo thins into the melted candy coating, tap off excess and place on the lined sheet. Freeze to chill the coated cookies.
- Repeat melting with remaining candy melts. Insert a toothpick into each marshmallow, dip into the candy coating, and coat evenly. Press the coated marshmallow onto the frozen coated cookie; the chill helps it stick.
- Fill any gaps with a little melted candy coating, allow to set at room temperature, then pipe a thin black band and press a small yellow candy in the center for the buckle.
For the Green Vanilla Cupcakes:
- Preheat oven to 350°F (177°C) and line muffin tins with liners. This recipe yields about 18–20 cupcakes.
- Sift and whisk together the flour, baking powder, baking soda and salt. Set aside.
- Cream butter and sugar until light and fluffy. Add egg whites one at a time, then the oil and vanilla.
- Alternate adding dry ingredients and buttermilk, beginning and ending with dry ingredients. Mix until just combined. Add green gel color and fold in gently—do not overmix.
- Fill liners two-thirds full and bake 16–18 minutes or until a toothpick comes out clean. Cool in pan briefly, then transfer to a wire rack to cool completely.
For the Green and Orange Frosting:
- Beat softened butter and salt until pale and fluffy.
- Add half the powdered sugar, then the cream and vanilla. Continue adding the remaining sugar a cup at a time, mixing on low until combined.
- Increase speed and beat 5–7 minutes until light and fluffy. Divide the frosting and tint one portion green and the other orange.
Assembly:
- Optional: Core the center of each cupcake with the bottom of a piping tip or apple corer and fill with gold sprinkles for a hidden treasure.
- Scoop or pipe a generous mound of green frosting on each cupcake. Smooth the top and roll the sides in orange sprinkles to suggest a beard.
- Pipe a swirl of orange frosting on top to create hair, then finish each cupcake with a leprechaun hat.
