This Smoked Tom Collins is made with a smoked basil simple syrup that highlights the gin’s bright botanicals and gives the cocktail a smooth, lemon-lime soda–like finish.

Gin is an herb-forward spirit flavored with juniper, citrus and other botanicals. Neat it can be bold, but mixed with lemon juice, club soda and a touch of sweetness it becomes a refreshing, easy‑drinking cocktail.
In this version the sweetness comes from a smoked simple syrup infused with fresh basil. If you prefer, you can swap basil for other herbs like rosemary or mint, and add a strip of lemon rind for extra citrus aroma.

Ingredients
- 2 tbsp smoked basil simple syrup
- 1/4 cup gin
- 2 tbsp lemon juice
- ice
- 1/4 cup club soda
Garnish
- lemon slice
- basil leaf
Instructions

Prepare a batch of smoked simple syrup and steep it in a jar with fresh basil leaves until fragrant.

Combine 2 tbsp smoked basil simple syrup, 1/4 cup gin, 2 tbsp lemon juice and ice in a cocktail shaker. Shake vigorously for 15–20 seconds.

Fill a tall glass with ice, strain the mixture into the glass, then top with club soda. Garnish with a lemon slice and a basil leaf.
