One-pan pork chops with rice quickly becomes a weeknight favorite: juicy pork chops simmered in a silky, creamy sauce with mushrooms. Serve over rice or mashed cauliflower for a comforting meal.

I enjoy true crime, though it’s a mixed bag for me — fascinating to read and watch, but often unsettling. Lately I watched Abducted in Plain Sight on Netflix: disturbing yet compelling. Switching to something lighter — how was your Valentine’s Day? I’m a fan of small, thoughtful celebrations rather than big gifts. We kept it simple with heart-shaped pancakes for the kids and a cozy dinner.
For our dinner we had bacon-wrapped scallops and a rib roast, but this one-pan pork chops and rice recipe would have been a lovely, easy alternative for two.

What’s in this one-pan pork?
Pork is an economical, tasty change from chicken or beef. This recipe features pan-fried pork chops and mushrooms in a smooth, creamy pan sauce served over rice (or mashed cauliflower for a lower-carb option). The sauce is simple — stock and cream — and the pork gets a paprika-based rub that gives the dish its warm reddish hue and great flavor.
If you like quick, uncomplicated weeknight dinners, this fits right in. It’s the kind of recipe you can make on busy evenings and feel proud of. It joins other easy favorites like cheesy Mexican quinoa skillet, sheet-pan chicken with sweets and beets, and a lighter chicken fettuccine Alfredo.

Is this one-pan pork chops and rice keto-friendly?
Yes — the recipe is adaptable. The creamy sauce comes from stock plus heavy cream (or whole milk), and the bold spice rub centers on paprika. Serve over rice for a classic presentation, or use mashed cauliflower to keep it low-carb and keto-friendly. Mashed cauliflower makes a surprisingly satisfying base — I often make it in the Instant Pot.
This recipe is quick, flavorful, and versatile; it’s likely to become a go-to weeknight meal.
Wishing you a great weekend — give this one-pan pork a try!

Description
One-pan pork chops with rice make a quick, comforting meal. Pork chops are browned, then simmered with mushrooms in a silky cream sauce. Serve the chops and sauce over rice or mashed cauliflower for a delicious weeknight dinner.
Ingredients
Scale
- 4 – 6 oz pork chops, bone-in preferred*
- 2 tsp paprika
- 1 1/2 tsp black pepper
- 1/2 tsp sea salt
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/2 cup yellow onion, diced
- 1 cup sliced cremini mushrooms
- 1/2 cup stock (chicken or vegetable)
- 1/4 cup heavy cream (or whole milk)
Instructions
- Remove pork chops from the fridge about 1 hour before cooking so they come closer to room temperature. Pat dry with paper towels.
- Mix paprika, black pepper, sea salt, chili powder, and garlic powder. Rub the spice blend on both sides of the pork chops.
- Heat olive oil in a large skillet over medium-high heat. When hot, add the pork chops and cook about 6–7 minutes per side until browned and cooked through. Transfer chops to a plate and cover to keep warm.
- In the same skillet, add the minced garlic and sauté for about 1 minute. Add diced onion and sliced mushrooms and cook 1–2 more minutes. Pour in the stock and scrape up any browned bits from the pan. Simmer for 5–6 minutes until the liquid reduces slightly. Add the heavy cream (or milk) and heat another 1–2 minutes until warmed through. Return the pork chops to the skillet, cover, and cook 1–2 minutes to meld flavors. Serve over rice or mashed cauliflower, spooning the sauce and mushrooms over the chops.
Leftovers keep in the fridge for 2–3 days in an airtight container.
Notes
- Bone-in pork chops generally stay juicier than thin boneless chops. The chops used here are about 1″ thick. If using boneless chops, reduce cooking time by a couple of minutes to avoid overcooking.
