Pizzadillas: Crunchy Pizza-Stuffed Quesadillas Recipe

The solution was to develop meals that everyone would enjoy — adults and kids alike — without making extra work for myself.
Pizzadillas!If you’re in the same situation, take heart: gluten-free food can be delicious. With the right ingredients and a little creativity, you can serve dishes your whole family will love. Bring them to potlucks or family gatherings and the platter will come home empty — often because no one even realizes the food is gluten free.

The Pizzadilla is a family favorite and an easy way to combine two kid-approved classics: quesadillas and pizza. It’s quick, simple, and endlessly customizable, so you can adapt it to different tastes and dietary needs. We use Udi’s gluten-free tortillas because they are soft, pliable, and very close to wheat tortillas in texture and flavor.
Change the toppings to make different varieties: Canadian bacon and pineapple for a Hawaiian-style Pizzadilla, or Alfredo sauce and chicken for a white-pizza version. You can keep it vegetarian with lots of fresh vegetables, or load it with your favorite meats. No matter how you top it, this recipe is convenient, kid-friendly, and sure to become a repeat favorite.

Ingredients

  • 2 Gluten Free Tortillas we use Udi’s
  • 2 tablespoons Prepared Marinara Alfredo or another pizza sauce
  • 1 Tablespoon oil for frying
TOPPING IDEAS
  • ¼ cup meat: pepperoni canadian bacon, grilled chicken or steak
  • ¼ cup veggies: finely chopped zucchini sliced olives, spinach, red onion, bell peppers, thinly sliced mushrooms
  • cup shredded cheese: pizza blend mozzarella or cheddar

Equipment

  • Large skillet (cast iron recommended)

Method

  1. Place a tortilla on a plate or cutting board.
  2. Spread your sauce of choice evenly over the tortilla and sprinkle with half the cheese.
  3. Add your chosen toppings and sprinkle with the remaining cheese.
  4. Heat oil in a large skillet over medium-low to medium heat. When the oil is hot, carefully place the prepared Pizzadilla in the skillet. Cover and cook until the bottom tortilla is golden brown and the cheese begins to melt. Watch closely to prevent burning. Carefully flip the Pizzadilla and finish cooking uncovered until the cheese is fully melted and the second side is a light golden brown.
  5. Remove from heat, slice, and enjoy!
