For the chocolate coating:
- 1/2 cup (4 oz) dark chocolate
- 1 tsp coconut oil
- Flaky sea salt for sprinkling
Instructions
- Line a baking sheet or large plate with parchment paper. In a large bowl, combine the peanut butter, honey, vanilla, and a pinch of sea salt. Stir until smooth and well combined.
- Add coconut flour, starting with 1/3 cup. Mix and test whether you can roll the mixture into balls. If it’s too soft, add coconut flour slowly, one tablespoon at a time, up to 1/2 cup total, until it reaches a rollable consistency.
