Ingredients
  • 1 lb chicken breast cut into thin strips
  • MARINADE:
  • 1 egg white
  • 1/2 tsp salt
  • 1/8 tsp ground pepper
  • 2 tsp cornstarch
  • VEGETABLES:
  • 2 cups button mushrooms or oyster or shiitake, sliced
  • 1/2 cup celery sliced
  • 1/3 cup each red, yellow and green bell peppers cut into large chunks
  • 3 slices ginger
  • 2 garlic cloves sliced
  • 1/4 cup spring onions sliced
  • 1/4 cup carrots thinly sliced
  • 1/2 tsp sugar
  • 3 + 1 Tbsp vegetable oil
  • 1/4 cup water or chicken stock
  • SAUCE:
  • 1/4 cup Shaoxing wine or sake
  • 1 Tbsp soy sauce
  • 2 Tbsp oyster sauce
  • 1/4 cup water
  • 1 Tbsp cornstarch
  • 1 tsp sesame oil
Instructions
  1. Mix the egg white with salt, pepper and cornstarch, then coat the sliced chicken with this mixture.
  2. Heat 3 tablespoons of oil in a wok or large frying pan. Add the chicken and fry until almost cooked through, then remove from the pan.
  3. Add the remaining oil and the sliced vegetables to the pan. Stir-fry until they reach your preferred tenderness, then return the chicken to the wok or pan.
  4. For the sauce, mix Shaoxing wine (or sake) with soy sauce, oyster sauce, water, cornstarch and sesame oil. Pour the sauce over the meat and vegetables and cook, stirring occasionally, for at least one minute or until the sauce thickens and coats everything.
  5. Serve the Moo Goo Gai Pan over steamed rice.
