We had so much fun this week with these Baked Double Chocolate Doughnuts. On my Instagram page @bakingwithblondie I walked through a LIVE video making these doughnuts step-by-step — I love doing those lives with you! If you watched, you’ll probably want to head straight to the kitchen and bake a batch. These are also a lovely Valentine’s treat or any time you’re craving a rich chocolate doughnut.
These doughnuts were first shared on my site over four years ago and have been a favorite ever since, especially around the holidays. What makes them stand out is not only the soft, tender, chocolatey bite that’s somewhere between cake and brownie, but how quick and easy they are to make. You don’t need a stand mixer — just a couple of bowls and a whisk. The batter comes together fast, they bake quickly, and they set up rapidly. Plan to double the recipe because they disappear fast!

20 minutes to doughnuts
These baked doughnuts are perfect when you want something indulgent but don’t have hours to spend in the kitchen. The texture is tender and chocolate-rich, and the recipe yields reliably great results with minimal fuss. Because they bake quickly, they’re ideal for last-minute celebrations or sweet cravings.

Doughnut pan required
A doughnut pan is necessary for this recipe — regular or mini both work well. Lightly grease the pan with baking spray or a smear of shortening, then pipe the batter into each cavity using a piping bag or a zip-top bag with the corner snipped. Fill each cavity a little less than halfway for nicely shaped doughnuts.

Once baked, these doughnuts are delicious dipped in chocolate ganache. The combination tastes like a cross between cake and brownie batter, and when finished with a silky ganache and sprinkles, they make a sweet, show-stopping treat for Valentine’s Day or any celebration.

I used a few different sprinkle options here, but you can keep it simple by just dipping the doughnuts in ganache. Other good finishes include chocolate sprinkles, shavings, or curls — any sprinkle style you like will work.

I’m excited for you to try this updated classic from Baking with Blondie. It’s a simple, reliable recipe that’s perfect whenever you want a decadent chocolate doughnut without a lot of effort.
Enjoy, and happy baking!

Mandy

- 1/4 cup light brown sugar
- 3 Tablespoons granulated sugar
- 1 Tablespoon vanilla
- 1/2 cup buttermilk , room temperature

- 2 cups chocolate melts
- 1 cup heavy whipping cream (add more to achieve desired consistency)

- 1 cup themed sprinkles , we did Valentine’s Day this time, but you can use any color/size/shape you want!
Equipment
-
1 Doughnut pan mini or regular sized (or both!)
Instructions
How to make the chocolate doughnuts
-
Preheat the oven to 350°F and grease the doughnut pans with a light coating of shortening or cooking spray. Set aside.
-
In a small bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
-
In another bowl, whisk the egg, melted butter, light brown sugar, granulated sugar, vanilla, and buttermilk until combined.
-
Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
-
Transfer the batter to a large piping bag or a zip-top bag and snip a corner. Pipe the batter into the prepared doughnut pan, filling each cavity a little less than halfway.
-
Bake for 8–10 minutes (mine were ready at 8). Remove from the oven, invert the pan to release the doughnuts, and let them cool completely before dipping in ganache. Store cooled doughnuts in an airtight container.
How to make the Chocolate Ganache
-
Place chocolate melts and heavy cream in a microwave-safe bowl. Heat in 20–30 second bursts, stirring between each, until the mixture is smooth and glossy. Allow the ganache to cool slightly to thicken so sprinkles will adhere. If it’s too thin, add a few more melts and stir. Note: For a quicker set, melt the candy melts alone and dip the doughnuts without adding cream.
Assembly
-
Dip each cooled doughnut into the ganache, allow excess to drip off, then place ganache-side up on parchment. Immediately add sprinkles so they stick. Let set before serving.
