  • Chicken breasts — boneless and skinless. If they’re thick, butterfly or lightly pound them so they cook evenly. Ground chicken can be used if you form patties first.

  1. Set up three breading stations. Bowl 1 for flour, bowl 2 for the beaten egg, bowl 3 for panko mixed with the seasonings.
  2. Bread the chicken. Dredge each breast in flour, shake off excess, dip in the egg, then press firmly into the panko so the coating adheres.
