Balsamic Berry Salad Lettuce Cups

Light, fruity, and easy to assemble, these lettuce cups combine mixed berries with a balsamic-orange dressing, finished with fresh mint and crumbled cheese.
Ingredients
- 4 ounces blackberries, sliced
- 4 ounces strawberries, sliced
- 4 ounces raspberries, sliced
- 1 tablespoon Simply Dressed® Balsamic Salad Dressing
- 2 teaspoons fresh squeezed orange juice
- 6 Butter Lettuce leaves, washed and dried
- Fresh mint, for garnish
- 1/2 cup crumbled feta or goat cheese, for garnish
Instructions
- Combine the berries in a bowl and gently stir.
- In a small bowl, whisk together the balsamic dressing and orange juice.
- Pour the dressing over the berries and toss lightly to coat.
- Spoon the dressed berries into Butter Lettuce leaves to form cups.
- Garnish with fresh mint and sprinkle with crumbled feta or goat cheese.
- Serve immediately.
