Begin by peeling and finely chopping the onion and carrots, then fry gently in a large saucepan with a little oil until starting to soften.

Ingredients

  • 2 tablespoons rapeseed or sunflower oil
  • 1 onion, peeled and finely chopped
  • 2–3 cm fresh root ginger, peeled and finely chopped
  • 1 garlic clove, crushed
  • 2 carrots, peeled and sliced
  • 2 teaspoons ground turmeric
  • 1 potato, peeled and diced
  • 150 g dried red lentils, rinsed
  • 1 litre vegetable stock
  • Handful of spinach or curly kale (stalks removed)
  • 125 ml dairy-free milk (optional for creaminess)
  • 1 lemon, juiced

Instructions

  1. Heat the oil in a large saucepan or casserole. Add the chopped onion and carrots and fry gently for 2–3 minutes until they begin to soften.
  2. Peel and chop the ginger (a teaspoon is handy to peel ginger quickly). Add the ginger to the pan with the crushed garlic and cook briefly to release the aromas.
  3. Stir in the turmeric, then add the diced potato.
  4. Rinse the red lentils in a sieve and add them to the pan, then pour in the vegetable stock.
  5. Bring to the boil, then reduce the heat and simmer for 20–25 minutes until the lentils and potato are soft.
  6. Add the spinach or kale and cook for another minute until wilted. Remove any large stalks if using kale.
  7. Stir through the dairy-free milk if using, add the juice of the lemon, and season with salt and black pepper to taste. Serve hot.
