Souvlaki is a classic Greek street-food favourite, traditionally made with pork, but it works wonderfully with chicken thighs or lamb. The meat soaks up a lemony, garlic and olive oil marinade, giving it lots of bright flavour with minimal fuss.
Why I love chicken souvlaki:
- It’s a flavour-packed meal that’s easy to adapt — swap or omit toppings to suit fussy eaters. Prefer fries over salad? Go for it. Not a fan of tzatziki? Try garlic mayo or sweet chilli sauce.
- You can cook the chicken on a griddle, in a frying pan, under the grill, in an air fryer or on the BBQ for great char and texture.
- Most of the work is in the prep. Once the chicken is marinated, it takes only minutes to cook, making it ideal for a quick weeknight dinner or easy meal prep.

- Use chicken thighs for juicy, forgiving results at high heat. If you prefer breast, reduce the cooking time slightly to avoid drying out the meat.
📋 Flatbreads and toppings

- These are my favourite toppings, but use whatever you enjoy — chopped olives, coriander, fries or avocado all work well.
- Greek-style flatbreads are ideal, but Lebanese or Persian flatbreads, tortillas or pitas are excellent alternatives. Toasting the bread briefly makes the wraps more pliable.

Marinate the chicken for an hour, prepare the salad, cook the chicken on a griddle, pan or in an air fryer, then fill warm flatbreads with chicken, salad, tzatziki and crumbled feta.
Recipe Tips
- The lemon in the marinade can slightly change the meat’s color as it tenderises. For chicken thighs, keep marinating to a few hours maximum to avoid over-tenderising.
- For best char, use a griddle or the BBQ. The air fryer, skillet or grill (broiler) also give excellent results — adapt to the equipment you have.

Cook chicken ahead:
- You can cook the chicken in advance, though it’s best freshly cooked. If reheated, thighs may be slightly drier. If cooked ahead, cool quickly, cover and refrigerate for up to 2 days. Reheat in the air fryer or in an oiled frying pan until piping hot, then assemble the wraps.
Marinade ahead:
- You can marinate the chicken ahead of time — cover and refrigerate for up to 2 hours. For longer storage overnight, leave out the lemon zest, lemon juice and salt, then add them about 10 minutes before cooking.
Leftovers:
- Leftover cooked chicken is great cold the next day in salads or wraps. Cool quickly, cover and refrigerate overnight.

Chicken Souvlaki Recipe

Ingredients
Chicken and marinade:
- 500 g chicken thigh fillets, chopped into cubes (about 6 fillets)
- 2 tbsp olive oil
- 2 garlic cloves, peeled and crushed
- Zest and juice of 1 medium lemon (about 2 tbsp juice)
- ½ tsp salt
- ½ tsp dried dill or ½ tbsp fresh dill, chopped
Salad:
- ½ large cucumber, chopped
- 100 g Cos or Romaine lettuce, shredded
- 2 large tomatoes, chopped
- ¼ red onion, peeled and sliced
To serve:
- A squeeze of lemon juice (optional)
- 4 Greek-style flatbreads, toasted briefly if you like them warm
- Tzatziki, homemade or store-bought
- 100 g feta, crumbled
Instructions
- Combine the chicken and marinade ingredients in a bowl, stir well, then cover and refrigerate for 1–2 hours.
- Toss the salad ingredients together in a bowl and set aside.
Griddle / frying pan method:
- Heat a griddle or frying pan until very hot. Remove the chicken from the marinade and place in a single layer so it sizzles.
- Cook for a few minutes until browned, flip with tongs and continue cooking until cooked through. Slice one larger piece to check there’s no pink in the centre.
- Optional: squeeze over the juice of half a lemon for extra brightness.
Air fryer method:
- Lightly oil the air fryer basket. Add the chicken and brush or spray with oil. Air fry at 200°C/400°F for 15–18 minutes, tossing once halfway through. Check a larger piece to ensure it’s cooked through.
- Optional: finish with a squeeze of lemon.
Serving:
- Divide the chicken between the flatbreads. Add salad, a spoonful of tzatziki and crumbled feta, then roll up the wraps. Serve with any remaining salad and tzatziki.
