Ingredients
Brownies:
- 1 cup (2 sticks) unsalted butter
- 2 cups semi-sweet chocolate chips
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla
- 1–1/2 cups toasted all-purpose flour (see notes)
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup unsweetened cocoa powder
Cookie Dough Frosting:
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup light brown sugar
- 1 teaspoon vanilla
- 1–1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/3–1/2 cup whole milk
- 1 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish with non-stick spray and set aside.
- Place the butter and chocolate chips in a large microwave-safe bowl. Microwave about 2 minutes, stirring every 30 seconds, until smooth. Stir in the sugar. Add the eggs one at a time, stirring until combined, then stir in the vanilla. Add the flour, salt, baking powder, and cocoa powder, mixing until incorporated.
- Spread the batter evenly in the prepared pan. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
- For the frosting, beat the butter and brown sugar until smooth. Add the vanilla, then the flour and salt, beating into a thick dough. Add 1/3 cup milk to start, then add more a little at a time until the frosting reaches a spreadable consistency. Stir in the mini chocolate chips.
- Spread the frosting over cooled brownies, cut into squares, and serve.
Notes
To toast flour: spread the flour on a baking sheet and bake at 350°F for 5 minutes to reduce any potential bacteria. Let the flour cool completely before using it in the frosting.
Store finished brownies in the refrigerator.
