Ground beef is cooked with red bell pepper, red onion and taco seasoning, then piled onto slider buns, topped with cheese and baked until melty. I’m not always glued to the football game, but I always show up for the food. These sliders are ideal for tailgates, parties or feeding a crowd. The taco-seasoned beef is flavorful on its own and also makes great leftovers. I often double or triple the batch so there’s enough for guests and for another meal later.

The combination of taco seasoning and salsa gives the meat great flavor. If you omit the taco seasoning, the sliders take on more of a cheeseburger profile. Toasted buns, a generous layer of shredded cheese and a brief bake bring everything together—top with shredded lettuce, chopped cilantro and fresh salsa for a bright finish.

How to Make Beef Sliders

Preheat the oven to 350°F (175°C).

Step 1: Cook the Beef Mixture — In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 2 minutes. Add diced red onion and bell pepper and cook another 3–4 minutes. Add the ground beef and cook until browned, then drain excess fat.

Step 2: Season the Beef — Return the drained beef to the skillet and stir in taco seasoning and salsa or taco sauce. Remove from heat.

Grease a 9″ x 13″ baking dish or line a baking sheet with nonstick spray.

Step 3: Prepare the Buns — Split the roll sheet or arrange the bottom halves of the slider buns in the dish. Toast the bottoms in the oven 3–4 minutes before adding the beef to help prevent sogginess.

Step 4: Layer Beef and Cheese — Spoon the beef mixture evenly over the bottoms, then cover with shredded cheese.

Step 5: Finish the Buns — Place the top halves of the buns over the cheese. Melt butter and brush it over the tops. In a small bowl combine garlic powder, onion powder, taco seasoning, salt and pepper, then sprinkle this over the buttered tops.

Step 6: Bake — Cover the dish with foil and bake 15–20 minutes until the butter is absorbed. Uncover and bake 3–5 more minutes until the tops are lightly golden—watch closely to prevent burning. Remove from oven and garnish with shredded lettuce, chopped cilantro and salsa. Store leftovers in an airtight container and reheat in a low oven or air fryer.

Storage Tips

Store cooled sliders in an airtight container for up to 4 days. Reheat slowly in a 200°F oven until warmed through or heat in an air fryer at 350°F for about 5 minutes.

Ingredients

  • 3 tablespoons olive oil
  • 1 pound ground beef (80/20 recommended)
  • 2 garlic cloves, minced
  • 1/2 small sweet onion, diced
  • 1 red bell pepper, seeded and diced
  • 2 tablespoons taco seasoning
  • 3 tablespoons salsa or taco sauce

For the sliders:

  • 1 package (12) slider buns or King’s Hawaiian rolls
  • 1 1/2 cups shredded Colby Jack cheese
  • 3 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon taco seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Fresh salsa, chopped cilantro and shredded lettuce for garnish

Instructions

  • Preheat the oven to 350°F.
