My son asked for carrot juice recently, so we pulled out our juicer — which doesn’t get used nearly enough — and made a batch together.
I couldn’t stop at plain carrot juice, though, so I grabbed a few things from the fridge and the garden and created this tasty combination.

He loved helping scrub the carrots while I cut them into pieces to fit the juicer. It turned into a fun little activity and a great way to get him involved in the kitchen.
The juice is incredibly refreshing: the apples provide a natural, balanced sweetness without being cloying, while the ginger gives it a lively, warming kick. I often add a bit of fresh flat-leaf parsley to juices — it lends a bright, herbaceous note that pairs beautifully with fruit and root vegetables and adds a subtle depth of flavor.

This was the perfect afternoon treat. My three-year-old loved it and even asked for a second glass later in the day. With no added sugar or artificial ingredients, it’s a wholesome and satisfying option for the whole family.
