Chocolate-Strawberry Muffin Ice Cream Sandwiches

Ingredients
- 1 batch of 12 Healthy Double Chocolate Muffins with Fresh Strawberries, baked and cooled completely
- 1 cup + 2 tablespoons of your favorite reduced-fat vanilla ice cream or frozen yogurt (preferably organic or all-natural)
Instructions
- Cut each muffin in half horizontally.
- Scoop 1 1/2 tablespoons of ice cream onto the bottom half of each muffin, then place the top half back on to finish each ice cream sandwich.
- Enjoy immediately, or follow the make-ahead tip to freeze individual sandwiches for later.
Notes
Yield: This recipe is written for a full batch of 12 muffins, though the original muffin recipe may yield 12–16 depending on size. Each sandwich requires about 1 1/2 tablespoons of ice cream.
Baking: If you plan to make ice cream sandwiches, you can bake muffins without paper liners for a cleaner look. If using liners, peel them off before slicing. When baking without liners, coat the pan well with nonstick spray to prevent sticking.
Make-ahead tips: These sandwiches are best fresh, but they freeze well. Assemble sandwiches, wrap each individually in plastic wrap, and store in an airtight freezer bag. When ready to eat, let them thaw a few minutes to reach your preferred softness.
