I have a confession: I really dislike making cake pops. Even when I ran a home bakery, I avoided them unless a friend desperately requested them. I adore bite-sized cute desserts, though, so when I discovered how simple pie pops are, I was sold!

These jack-o-lantern pumpkin pie pops are a fun, seasonal treat that are much easier to make than cake pops and perfect for a Halloween spread.

Jack-o-lantern Pie Pops Materials

You don’t need much beyond standard baking tools and a pie pop maker. Here are the items used to make these jack-o-lantern pumpkin pie pops:

  • Pie pop maker (the BabyCakes model works well)
  • Hand mixer
  • Mixing bowl
  • Pastry brush
  • Treat sticks
  • Treat bags
  • Orange and black baker’s twine
  • Black permanent marker

Optional: a festive apron or seasonal décor to style your dessert table.

Pumpkin Pie Pops Recipe

Start by preparing the pumpkin pie filling — the aroma of pumpkin and warm spices is a big part of the fun. For these mini treats you’ll use pumpkin puree, eggs, brown sugar, a pinch of salt, pumpkin pie spice, and heavy cream. The filling yields a lovely autumn color and flavor.

Because these are small bites, half of a standard pumpkin pie filling recipe is usually plenty to fill about 24 pie pops. Your pie pop maker typically includes a small round cutter sized for the machine — punch out dough circles to assemble the pops in batches.

To assemble: brush one side of the dough circles with egg wash and place them egg-wash side down in the heated pie pop maker. Add about a teaspoon of pumpkin filling to each, tuck in a treat stick, then top with an egg-washed dough circle. Close the lid and bake until golden — check after about 4 minutes and add another minute or two if needed.

Remove the pie pops and let them cool on a wire rack. Don’t try to eat them straight from the maker — allow them to set so the filling firms slightly and the crust finishes crisping.

Turn the finished pie pops into jack-o-lanterns by drawing faces on treat bags with a black permanent marker. Slide the cooled pie pops into the decorated bags and tie them with black-and-orange twine or another seasonal ribbon. Jute twine also gives a charming rustic touch.

For display at a party, arrange the bagged pie pops in a small pail or bucket filled with dried lentils, corn, or beans to hold them upright — it looks festive and keeps the treats tidy for guests to choose from.

These mini pumpkin pies are a bite-sized way to enjoy pumpkin flavor without an overly sweet finish. They’re a nice balance to richer party desserts and perfect for the seasonal sugar rush of Halloween.

Ingredients (Yields ~24)

  • 1 cup pureed pumpkin
  • 1/2 cup heavy whipping cream
  • 2 eggs (one for the filling, one for egg wash)
  • 1/4 cup brown sugar
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp salt
  • 1 package refrigerated pie crust

Instructions

  1. Combine 1 egg and the brown sugar in a mixing bowl using an electric mixer.
  2. Stir in the salt and pumpkin pie spice.
  3. Add the pumpkin puree and heavy cream, mixing until smooth.
  4. Whisk the remaining egg separately for the egg wash.
  5. Use a small round cutter to cut out dough circles — 12 at a time to make six pie pops per batch.
  6. Preheat your pie pop maker according to the manufacturer’s instructions.
  7. Brush egg wash on one set of dough circles and place them egg-wash side down into the pie pop wells.
  8. Spoon about a teaspoon of pumpkin filling into each well.
  9. Insert a treat stick into the filling of each pop.
  10. Brush the remaining dough circles with egg wash and place them egg-wash side up over the filled cups to seal.
  11. Close the pie pop maker and bake about 4 minutes, then check for a golden brown color. If needed, close the lid and cook an additional 1–2 minutes.
  12. Remove the pie pops and allow them to cool on a rack.
  13. Draw jack-o-lantern faces on treat bags, insert cooled pie pops, and tie with twine or ribbon.
