How to Make Stoli Doli: Puerto Rican Coconut Rum Dessert Recipe

A homemade version of The Capital Grille’s famous pineapple martini, Stoli Doli is simple to prepare and exceptionally smooth to drink.

I’m not a big drinker, but a few years ago I tried a cocktail that changed my mind about cocktails altogether. During my first visit to The Capital Grille, I tasted their signature Stoli Doli and was instantly hooked. It’s a smooth, refreshing cocktail that highlights fresh pineapple and vodka in a perfectly balanced way.

The server at the restaurant explained how it’s made: Stolichnaya vodka is poured over fresh Dole pineapple slices and left to infuse. That simple process extracts the pineapple’s sweet, tropical flavor into the vodka, creating a naturally flavored spirit that works beautifully served straight or over ice.

WHAT IS A STOLI DOLI?

Stoli Doli is essentially pineapple-infused Stolichnaya vodka. To make it, place fresh pineapple chunks in a large container, pour vodka over them until they’re covered, and let the mixture sit for about 12–14 days. The vodka absorbs the pineapple’s natural sugars and aroma, resulting in a fragrant, slightly sweet spirit.

After infusing, strain the vodka, shake it with ice, and serve it straight up in a martini glass or over ice in a rocks glass. The cocktail is flavorful and easy to drink—sweet without being cloying, and packed with bright pineapple notes.

MAKING PINEAPPLE VODKA: IT’S SO EASY!

One of the best things about Stoli Doli is how effortless it is to make. Use the freshest, sweetest pineapple you can find—the fruit’s quality makes a big difference in the finished vodka. Cut the pineapple into chunks, place them in a large container (a dispenser with a spigot is handy), and pour a liter of Stolichnaya vodka over the fruit until it’s submerged.

Let the vodka infuse at room temperature for 12–14 days, then strain and bottle it. The infused vodka stores well in the refrigerator. As a tip: discard the pineapple after infusion—most of the flavor is extracted into the vodka, so the fruit itself won’t be very tasty.

Serve the Stoli Doli shaken and strained into a martini glass, or pour it over ice in a rocks glass. If it feels too strong, add a splash of pineapple juice or a light mixer to soften the alcohol while retaining the pineapple flavor.
