Toss carrots with olive oil, garlic, Parmesan and oregano, roast until tender and lightly caramelized, and you have a side dish that’s both healthy and full of flavor. This method highlights the carrots’ sweetness and gives them a pleasing texture that kids and adults both enjoy.

Silicone baking mats or parchment paper work great to prevent sticking and make cleanup easy. I often roast a variety of vegetables the same way—Brussels sprouts, broccoli and cauliflower all benefit from the same treatment. For these baby carrots, a short toss with the seasoning and a 30–35 minute roast at 400°F yields soft, caramelized carrots with lots of flavor.

Ingredients

  • 1 (16 oz bag baby carrots
  • 2 Tablespoons olive oil
  • 2 teaspoons minced garlic
  • 2 Tablespoons grated Parmesan cheese
  • ½ teaspoon dried oregano
  • 1 Tablespoon butter melted

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Line a baking sheet with a silicone baking mat or parchment paper.
  3. Pat the baby carrots dry and place them in a large bowl.
  4. Add olive oil, minced garlic, Parmesan and oregano to the carrots and toss gently to coat.
  5. Spread the carrots in a single layer on the prepared baking sheet, pouring any remaining oil over them.
  6. Roast for 30–35 minutes, or until the carrots are tender and heated through.
  7. Transfer the carrots to a serving dish, add the melted butter and toss gently to coat.
  8. Allow the carrots to cool for 10–15 minutes before serving.

Notes

Adding melted butter at the end is optional. It brightens flavor and helps prevent slightly dry skins after roasting.
