Ingredients

For the Burger Bowls

  • 1½ pounds ground beef (90/10)
  • 2 tablespoons yellow mustard
  • 4 medium onions, diced (about 500g)
  • Salt and pepper, to taste

For the Sauce

  • 7½ tablespoons light mayonnaise (112g)
  • 2½ tablespoons ketchup (42g)
  • 1 teaspoon vinegar
  • Pinch of salt, pepper and paprika

For the Crispy Potatoes

  • 2 pounds mini potatoes
  • 1 tablespoon avocado oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Place potatoes in a pot of water and boil about 20 minutes or until tender.
  • Preheat oven to 425°F (220°C).
  • Arrange potatoes on a full sheet pan (26 x 18) or two half sheets. Smash them with the bottom of a jar or forks; halve larger potatoes before smashing.
  • Lightly coat smashed potatoes with about 1 tablespoon (14g) avocado oil and sprinkle with garlic powder, salt and pepper. Bake 45–50 minutes, or until crispy.
  • While potatoes roast, cook ground beef in a skillet over medium-high heat with salt and pepper. Midway through, stir in the mustard. Cook until no pink remains and drain excess grease.
  • In the same or a separate pan, caramelize the diced onions over medium-high heat until browned. Add a tablespoon of water if needed and scrape up any browned bits.
  • Whisk the mayo, ketchup, vinegar, paprika, salt and pepper together in a small bowl to make the sauce.
  • Assemble bowls: divide the potatoes, beef, caramelized onions and sauce into five portions (about 100g of potatoes and 100g of beef per bowl, with ~2 tablespoons sauce each).
  • Let bowls cool before sealing and refrigerating. Reheat in the microwave 2–3 minutes and add fresh toppings after warming.
