Fall-Off-the-Bone Crockpot BBQ Ribs
No smoker, no grill—just incredibly tender, flavorful ribs made in your slow cooker.
If you think you need a smoker or grill to make excellent ribs, try this easy Crockpot BBQ Ribs method. The slow cooker delivers juicy, well-seasoned ribs that fall off the bone every time, with minimal effort. It’s perfect for busy weeknights, casual dinners, or feeding a crowd.
I often buy racks of baby back ribs on sale and freeze them for recipes like this. Pork is economical, and this is a “set-it-and-forget-it” meal that tastes special without a lot of work. This crockpot approach is similar to oven-baked ribs but keeps the oven free and avoids heating the kitchen. If you prefer smoked ribs, look for a smoked ribs recipe instead.
These ribs pair well with many sides. Popular choices include creamy macaroni and cheese, seasoned green beans, and a variety of pasta salads, plus grilled corn or other simple summer sides.

Why You’ll Love This Recipe:
- No smoker or grill required
- Minimal prep with a few straightforward ingredients
- Great for weeknights, potlucks, or parties
- Melt-in-your-mouth texture and big barbecue flavor
Ingredients You’ll Need:
- 2 racks baby back ribs (spare ribs will also work)
- Olive oil to help the seasoning adhere
- Dry BBQ rub — any store-bought or homemade rub will do
- Your favorite barbecue sauce for brushing and finishing
Instructions:

Begin by removing the membrane from the back of each rack. Slide a finger under the edge to loosen it, then grip the membrane with a paper towel and peel it away. Removing the membrane improves the ribs’ texture and allows flavors to penetrate.

Cut each rack in half so the pieces fit into your slow cooker. Lightly coat the ribs with olive oil, then generously rub all sides with your chosen dry BBQ rub.

Arrange the ribs bone-side down in the crockpot, stacking as needed. You don’t need to add liquid; the ribs will release enough juices as they cook.
Cover and cook on LOW for about 8 hours for tender, fall-off-the-bone ribs. If you prefer a slightly firmer bite, reduce the cook time to 6½–7 hours.

When cooking is complete, carefully transfer the ribs to a foil-lined baking sheet. Brush each piece generously with barbecue sauce.
Broil for about 5–7 minutes, watching closely so the sauce caramelizes without burning. Remove when the sauce is glossy and slightly charred at the edges.
That’s it — serve hot and enjoy your Crockpot BBQ Ribs.

What If You Don’t Have an Oven?
No broiler? Finish the ribs in a hot skillet or on a grill pan for a minute or two per side after saucing to create a sticky glaze. A quick sear in a nonstick pan will also help thicken and caramelize the sauce. Alternatively, brush the sauce on during the last hour of crockpot cooking — it won’t caramelize, but the ribs will still be delicious.
